Accidental Vegan (Shhh, don’t tell anyone!)

After our 3 wonderful years enjoying Texas and all the wonderful cuts of beef she has to offer, our blood work is proof that too much of anything is not a good thing!

My husband and I recently had our annual physicals (although for me it is more like every tens years) His doctor wanted to put him on a statin for his cholesterol levels, and my doctor told me that mine were slightly elevated, I think she was being kind.

We started making all the changes that you are told to make; no red meat, more fish, chicken in moderation, and no trans fats. Well, things weren’t improving…..

I picked up a book that a friend mentioned, many years ago, “Forks Over Knives at a used bookstore. I didn’t have a lot of good “vibes” going into it, as I thought most of these Vegans were a little loopy to say the least. (I was actually a little embarrassed even buying the book.)

It was fascinating! I then started researching (as I have read so many “diet” books) and thought, it was probably loaded with false or misleading, at best, information.

I then stumbled across the movie “The Game Changers”, that I’m guessing everyone has heard of except my husband and I. Wow, fascinating! (It comes out on Netflix October 16, 2019, if you haven’t seen it yet. And “Forks Over Knives” is there already.)

Our purpose in “trying” this lifestyle is for health benefits. Don’t’ get me wrong, I love animals and believe that we are meant to be good stewards of the environment, but that is not why I am doing this. However, I also feel that animals are here for us to enjoy, and kill humanely for consumption.

We are going to attempt this lifestyle until my husband’s next bloodwork in November, and I will share the results then.

Just to be clear, we will be eating a “whole” plants based diet, with VERY LITTLE FAT. No meat, dairy (to include my favorite….cheese.), and cooking virtually oil-free. So if you are interested please come along for the ride.

Forks over Knives Cookbook

This Bosh book is not oil free, but has some great vegan recipes. It is an English book so you will need to look up terms that you may not be familiar with, but most are easy. They also have many more books as well as youtube videos explaining recipes.
