Well, it worked!

Over a year ago I wrote about our family going Vegan for my husband’s health in this post Accidental Vegan (Sshh don’t tell anyone!). We went “full on” Vegan. This was a challenge as we were on our way to Durham, NC to visit our son and DIL, and then on to Orlando, FL in our new Winnebago (which is an entirely other story altogether.). Burger King had just come out with its new Impossible Burger which really helped! (I realize now that this is Vegan junk food, but it still worked!)

We got back from vacation and my husband went in for his 6 week blood test, to determine if medication was needed. Here are the remarkable results, junk food and all!

Over 100 points down in 6 weeks! His doctor asked, “Did we put you on medicine?” then again asking “Are you sure you aren’t taking medicine?!” They had a long discussion about the movie “The Game Changers” and our new lifestyle. It was cute to hear the doctor say he was “proud” of my husband (who is far older than his doctor). I think many people say they will change their eating habits, but never do. Needless to say, he is not on medicine.

We have totally changed our eating habits, and I would say it has taken a year to get into some sort of routine or to feel normal about planning our menu. It is still a challenge to eat out, but at least we have Burger King!

There are so many benefits we have encountered besides just the blood levels.

  • No indigestion
  • Regularity (The gas goes away after a month or so…I promise.)
  • Cost Savings! This is a biggie as long as you don’t buy too many processed foods.
  • Dishes are so easy to clean without animal and dairy cooked on them!
  • We have learned about many new dishes and spices that we would have never tried before, (vegetables can be a little boring on their own).
  • Son’s acid reflux is gone (except when he drinks coffee)
  • Teen’s faces have cleared up
  • Noticeably reduced inflammation in our muscles and joints

The great news is, vegan is catching on so these sections of the grocery store are getting larger everyday with brands like; Gardein, Beyond Meat, LightLife and many more. Again, keep in mind, these are considered “junk food” and if losing weight is a goal you may want to limit your intake. But they sure help when you are craving burgers or chicken.

My next blog will be on getting started. It may be a little late in the year, as I know many have already committed to eating healthy as a resolution, but honestly there are so many things to learn. I am still behind the learning curve, but maybe we can get healthier together!
